Around the Caves

So, there is always something happening at the caves.  In particular, this week they have begun construction on a new aging room for washed rind cheeses that will be made of brick with cold water hoses sending running water through the bricks to keep the temperature in check.  Consider this your "insider" fact for the day.  Oh yeah, I think I may just be the first person in the world to provide pictures of said room.  Look for them in about a week.

Anyway, I thought I would just provide some snapshots of life at the caves to give you an idea of what goes on during the day.





This is the purchasing department and offices for NYD.  They have a nice waiting area, while there is a big section of office-style desks for the directors, human resources, accounts, and members of the wholesale department.
The staff of the caves participate in "community meals" each shift.  One person take off a little before lunch and cooks for the staff.  Then, they all sit down and break bread together.  It is a terrific opportunity to bond, talk about things within the company, share personal stories, and grow as a staff.  




                                                 

These are the cheese men of the caves.  David on the left, is a cheesemaker from down under.  He has been one of my tutors for shifts in the caves.  The other person on the left is master stilton tosser, and true Englishman, Michael.  And on the far right is Vio.  There is a reason they call him Vio.  It is only just beginning to be revealed to me.........

And finally, today I worked in packaging, the place that puts the orders together to send out to the world. Yes, far away to Europe, America, and even Dubai!!

                                               

Everyone is very helpful, respectful, and professional.  They have been a great help and continue to teach and be patient with the old man.  In fact, they are taking me out for a drink at the pub......I have to go!!
